Zucchini Banana Bread
This bread is easy to make and sure to be a crowd pleaser.
Serves 2 loaves (12 slices each)

Ingredients
1-1/2 cups sugar
1 cup mashed bananas
1/2 cup shredded zucchini
1/2 cup butter, softened
1/4 cup buttermilk
4 eggs
2 teaspoons vanilla
1-1/2 cups all-purpose flour
1 cup whole wheat flour
3 tablespoons ground flaxseed
1-1/2 teaspoons baking soda
1 teaspoon salt
Directions
- Heat oven to 325ᵒF. Grease bottom and 1/2 inch up sides of 2 1-1/2 quart loaf dishes with shortening or cooking spray.
- In large bowl, mix sugar, bananas, zucchini, butter, buttermilk, eggs and vanilla until well mixed. Stir in remaining ingredients. Divide batter evenly between loaf dishes.
- Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes.
- Loosen sides of loaves from dishes; remove from dishes and place top side up on cooling rack. Cool completely, before slicing, about 2 hours.
