Thanksgiving Leftover Casserole

The beauty of this recipe is that it requires very minimal - basically no - cooking. All of that hard work you put into your Thanksgiving feast is celebrated in this sweet and savory, layered creation in Pyrex Deep. The jam brings a bit of brightness to balance the hearty turkey and potatoes - with the croissant acting as the buttery backbone. This combo is based on my favorite Thanksgiving all-stars but easily adaptable based on what survives your holiday table.
Ingredients
3 large croissants, sliced in half
4 cups mashed potatoes, divided
1 cup gravy
1 cup cranberry sauce
2 cups turkey, torn into bite size chunks
½ cup roasted root vegetables
- Pre-heat your oven to 375 degrees.
- Spray your Pyrex Deep Dish with cooking spray.
- Line the bottom of your dish with the bottom halves of the croissants - outsides facing down.
- Using a spoon, spread the first cup of mashed potatoes on top of the croissant layer, drizzle with a thin layer of gravy.
- Using a different spoon, spread a thin layer of cranberry on top of the mashed potato gravy layer.
- Repeat the mashed potato/gravy layer atop the cranberries.
- Top this layer of potatoes/gravy with the cut up pieces of turkey - spreading evenly to cover the potatoes.
- Top the layer of turkey with another of potatoes, gravy, cranberry, and more mashed potatoes.
- Finish the layer with the tops of the croissants, arranged side by side to cover the potatoes.
- Sprinkle with the root vegetables then cover with tin foil and bake until all layers are heated through, about 12 minutes.
